Borsch

The traditional Russian recipe. Brought to you by Herman F.

To make borsch you need:

  • 225g cooked beetroot, peeled and cut into small strips
  • 350 g white cabbage, shredded
  • 350 g potatoes, peeled and cut into small pieces
  • 1 large onion, peeled and chopped
  • 1 teaspoon of caraway seeds
  • 2 1/2 pints of chicken stock
  • Salt and pepper
  • Some whipped cream

Method:

  1. Put stock and beetroot into the boil and let it simmer gently for 20 - 30 minutes

  2. Add the cabbage, potatoes, onion and the caraway seeds, let it simmer for another 20 - 30 minutes

  3. Add herbs, a touch of salt, pepper and other seasoning for taste.

  4. Serve with cream on top, and a touch of herbs.
